Electro-plating of Zinc onto the Steel.

Contrary to popular belief, zinc plated objects are not intended or expected to last indefinitely. Zinc also oxidizes, just more slowly than iron, and the lifetime of a zinc plated item is determined by how thick the zinc plating is.

Dipping is a cheaper process than electro-plating, however Galvanized coatings are almost always several times thicker than electro-plated coatings.
Stainless Steel Chain is made of Stainless Steel, not coated with it.

If the Stainless Steel is corrosion resistant to the environment it's placed in, it can essentially last forever.  The better grades of stainless can hold up indefinetly in most environments.
Zinc Plated & Galvanized Chain are made of steel with a sacrificial zinc coating.  The coating is eventually consumed.
